oven 'boiled' potatoes - so easy!

I recently discovered this way of 'boiling potatoes'. It is easy as can be, and saves you the trouble of frequently checking your stove top boiled potatoes. Just start them a bit earlier than you usually do, and forget about them until time to check. They are not as easily over cooked as regular boiling, so if you go over they won't become mushy. Their texture appears to be the same as conventionally boiled. I like to cook several potatoes for use in the upcoming days, and this is an easy way to do it. I will be 'boiling' my potatoes in this way from now on!

    Place amount of potatoes desired in a casserole dish with a lid, and add 1 cup water. Cover with lid. Place in cold oven, then bake at 300 degrees for 1 to 3 hours. *Just a few times will let you know more precisely how long to leave the potatoes in the oven. It depends on the amount and size of the potatoes. You are really trying to find out the soonest they will be done, as you can go over quite a bit and they will still be fine. Last night I cooked 4 medium potatoes this way, and they were done after an hour.
