Mashed potatoes are a must for any holiday meal, and this is an easy recipe to have handy. Made with basic ingredients, they're very creamy and fluffy. If you prefer buttery mashed potatoes add another 1/4 stick of butter to the heavy cream.

Ingredients For nanny's mashed potatoes

  • 1 c
    water
  • 5 lg
    Russet potatoes, scrubbed
  • 1 pt
    heavy cream
  • 1/2 c
    butter, unsalted
  • 2 Tbsp
    instant mashed potatoes
  • 1 Tbsp
    salt
  • 1 tsp
    pepper

To prevent small chunks of potatoes, we suggest mashing the potatoes before adding to the cream mixture.
  • Steaming potatoes.
    1
    Pour water into a saucepan. Place a large steamer basket into the saucepan over (not touching) the water and place the potatoes into the basket.
  • Lid on the steamer to cook the potatoes.

    Bring the water to a boil. Reduce heat to a simmer. Cover the pan and basket with a lid and steam potatoes until tender in the center, about 20 minutes. A skewer inserted into a potato should easily pierce the center. Reserve potato cooking water. Using tongs to hold hot potatoes. Reserve potato cooking water. Peel potatoes and set them aside.
  • Mixing cream and butter.

    Place 1 cup of cream and the butter into the work bowl of a large stand mixer fitted with a mixing paddle. Start the machine on low speed. Mix until the cream and butter are blended.
  • Potatoes added to the mixer.

    Add potatoes and beat until thoroughly mixed.
  • Slowly adding remaining cream.

    As potatoes mash, gradually pour in the remaining cup of cream.
  • Adding potato flakes to the potatoes.

    If potatoes are too stiff, beat in reserved potato cooking water, 1 Tbsp at a time. If potatoes are too runny, beat in instant mashed potato flakes, 1 Tbsp at a time, until you reach the desired consistency.
  • Adding seasonings to the potatoes.

    Season with salt and pepper.
