I have made this dish for many years and everyone always raves about it. It's simple, easy and can be made the day or night before.

Ingredients For mississippi potatoes

  • 8 c
    potatoes (cooked and diced) i use red.
  • 1 c
    mayonnaise
  • salt & pepper to taste
  • 1 lb
    processed american cheese, diced
  • 1/2 c
    chopped onion
  • 4 - 6 slice
    bacon, fried
  • 1/2 c
    green or black olives (i use black)

How To Make mississippi potatoes

  • 1
    Toss potatoes with mayonnaise, salt, pepper, diced cheese and onion. Place mixture in a greased 9 x 13 inch pan. Sprinkle with crumbled bacon and olives. Bake at 325 degrees for 1 hour. Can be made ahead and frozen.
