This is a great way to use up leftover mashed potatoes. My family has started requested I make too many potatoes just so we can do this the next day. Even if it doesn't all get eaten the first time, you can reheat in the microwave and they are super yummy. You can adjust the ingredients based on your taste. Think what you put in your potato salad to make it yummy and toss it in. Bacon would be good. :)

Ingredients For ho potato salad

3 cmashed potatoes (leftovers work great!)

2eggs

1/2 cmayo

2 Tbspmustard
-
2 Tbsppickle relish, sweet or dill

3 Tbsponion, minced
How To Make ho potato salad

1Heat up mashed potatoes in skillet.

2Add in mayo, mustard, relish, and onion. Stir until blnded uniformly.

3Push potatoes to the side in the skillet making room to crack your eggs.

4Crack eggs and stir to scramble.

5Mix eggs into potato mixture.

6Continue to heat and stir until mixture is warmed through and mixed well.
