This some thing I like to make when we get extra zucchini. Very easy and good.

Ingredients For garlic-rosted potatoes and zucchini

  • olive oil spray
  • 3/4 lb
    red potatoes
  • 1/2 lb
    zucchini
  • 2 md
    garlic cloves,crushed.
  • salt
  • fresh ground black pepper.

How To Make garlic-rosted potatoes and zucchini

    line a rimmed baking sheet with foil and spray with olive oil...Wash potatoes(Do not peel)...Slice abought 1/2 inch thick...Do the same with the zucchini...Mix garlic with olive oil spray together on baking sheet... Add potatoes and zucchini and toss to coat..

    spread potatoes and zucchini over the baking sheet to form one layer...Turn on Broiler. Place baking sheet under broiler and roast for 10 min...Remove tray,turn potatoes and zucchini,,(turn them completly over)...Place back under broiler and bake 5-7 min. more or untill done. Remove let cool and place in a large bowl to serve...Goes great with grilled pork chop's.
