Ok, I admit it. I'm a very picky eater. I don't like many foods, but most of all mustard and pickles. When I used to make potato salad, I just put potatoes and Dukes mayo, but then I came up with this recipe that is always a hit, no matter whether you're a picky eater or not. It' simple, very few ingredients but deeeeeelicious!! My husband and I once made 50 lbs of it for a dinner we were having at our church and it was all gone halfway through the dinner. Everyone loved it. So try it, you'll like it.

Ingredients For cathy's potato salad (for picky eaters)

  • 10 lb
    potatoes, peeled and diced
  • 1 lb
    bacon
  • 8
    eggs, hard boiled
  • 1 qt
    dukes mayonnaise
  • salt and pepper

How To Make cathy's potato salad (for picky eaters)

    Peel potatoes and cut them in bitesize pieces. Rinse starch off and put in large pot covered with water. Salt water. Boil about 20 minutes until done. Drain and put in large bowl.

    Put 8 eggs in pan with enough water to cover. Pour about 2 tablespoons of salt in water. Bring to a boil, and turn to medium. Boil about 15 minutes. Pour off water. Put eggs in a bowl, cover with cold water and add about 15 ice cubes. Leave for 10 minutes. This makes the eggs very easy to peel. Peel, chop and add to bowl with potatoes.

    Slice bacon crosswise 1/4". Place the small pieces in hot skillet and brown until crisp. Stir often This is easier for me instead of crumbling after it's cooked, but you can cook it however you like. Drain on paper towels and add to bowl with potatoes and eggs.

    Add Dukes mayonnaise to potato mixture. Salt and pepper to taste and enjoy. I promise, if you are a picky eater, this will be the best potato salad you have ever tasted.
