The key to this potato casserole is the caramelized onions. Very flavourful. My family loved this version of scalloped potatoes.

Ingredients For caramelized onion scalloped potatoes

4 lgsweet onions, thinly sliced

1 cbutter, divided

1/3 cflour
-
6 lgyukon gold potatoes, thinly sliced

3 cheavy cream or half & half

3 sprigfresh rosemary
-
1 Tbspsalt

1 tspground pepper
-
1/4 cparmesan cheese, grated
How To Make caramelized onion scalloped potatoes

1Put onions and 1/2 cup of butter into a large skillet over low heat. Cook, stirring occasionally, until the onions have caramelized, approx 40 minutes.

2Preheat oven to 350 degrees. Coat a 9 x 13 inch baking dish with cooking spray.

3In a medium saucepan, melt 1/2 cup of butter. Add flour and brown lightly, stirring constantly. Add cream, salt & pepper. Stir on medium heat just until the sauce starts to thicken. Remove from heat.

4Place a layer of sliced potatoes on the bottom of the pan. Cover with a 1/4 of the onions. Pour 1/4 of the cream mixture over the onions. Sprinkle some of the fresh rosemary over the layer.

5Repeat layers 4 times. Sprinkle parmesan over the casserole and bake for 1 hour until golden brown and sauce is bubbly.
