This recipe was given to me by my sister-in-law. It makes a very creamy dish. I use 1% cottage cheese and light sour cream. Can also use lower fat cheddar cheese.

Ingredients For macaroni & cheese

  • 1 1/2 c
    elbow macaroni, cook according to pkg. directions
  • 1 c
    sour cream, lite or regular
  • 1
    egg, beaten
  • 1 1/2 c
    cottage cheese, small curd. use lower fat options if desired
  • 12 oz
    shredded cheddar cheese, use lower fat if desired
  • salt & pepper to taste

How To Make macaroni & cheese

  • 1
    Mix together the sour cream, egg, cottage cheese and cheddar cheese. Add to the cooked, drained macaroni.

    Grease a casserole and add the mixture to the dish. If desired, you can top with Ritz crackers mixed with melted butter. Bake at 350 degrees for 30-45 minutes.
