3-cheese mac 'n cheese

When I first started learning to cook, I used the boxed mac 'n cheese and was happy with that. Later on, though, I decided that homemade had to be better. This is my basic version but on occasion, I try different types of cheeses.

Ingredients For 3-cheese mac 'n cheese

  • 4 c
    cooked elbow macaroni, drained
  • 2 c
    grated cheddar cheese
  • 1 c
    grated mozzarella cheese
  • 8 oz
    velveeta cheese, cubed
  • 1 1/2 c
    milk or heavy cream
  • 1/2 c
    sour cream
  • 2 Tbsp
    butter, cut into pieces
  • 1/2 tsp
    salt
  • 1 tsp
    ground black pepper

How To Make 3-cheese mac 'n cheese

    In a large sauce pan, heat milk until hot but not boiling. Add cheeses, sour cream, butter and salt; heat on low until smooth, stirring constantly.

    Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheese mixture. Gently stir to combine well.

    Pour macaroni mixture into a casserole dish and top with additional cheese if desired. Bake for 30 to 45 minutes.
