This recipe was handed down to my mother from her mother to me and my sisters. It is over 65 years old. Delicious and YES fattening.... I hope you will enjoy. It is Addicting, to say the least ! My family is from the South and we do have a few Northerners in our big family. They thought fried corn was just ridiculous and looked like mush--lol-- Now, all we hear is, PLEASE COOK YOUR FRIED CORN AND MAKE ALOT !! If you wish to make a bigger batch of this, use at least 24 ears of corn and add the water & flour to make a consistency that almost will look kinda runny. The flour is what will thicken.

Ingredients For fried corn

  • i always start with at least 12 ears of sweet corn on the cob.
  • grade the corn
  • being careful not to grade the cob
  • after this, using the back of a knife, remove the juices from the graded cob also into the bowl
  • c
    add one half cup of water to graded corn
  • c
    add one half cup of flour(plain or self rising)
  • mix together all of these making the flour dissolve as much as possible
  • add salt and pepper to your taste
  • in a preferably cast iron skillet or a non stick will work also
  • add one to two sticks of real butter sweetened or your choice
  • i also use a few tablespoons of any type of left over oil from meat drippings i save for flavoring taste to the butter in the pan
  • let the butter and drippings heat to where it has melted
  • pour in the grated corn to the pan
  • continue to stir constantly
  • the corn will begin to cook, as you will see it will be popping and can burn you, be careful
  • this must be stirred continually, do not leave unattened
  • you will be able to see when the corn is fully cooked by the appearance and consistency
  • this usually takes at least 20 minutes to this point
  • taste for your likeness
  • it is so delicious and yes fattening---

How To Make fried corn

    After grading the corn, add the water and flour and salt and pepper

    add 2 tablespoons of fat dripping and 2 sticks of butter to pan
  • 3
    Add to heated pan and stir constantly until you see the corn is cooked, at least 20 - 25 min.
