If you are vegan or have vegans to feed, or even someone with lactose intolerance, this is a great substitute for ricotta cheese to use in lasagne, on pasta, or just to dip veggies or bread into.

Ingredients For vegan ricotta "cheese"

1/2 Tbspnon-hydrogenated vegan margarine

1 pkgsilken tofu - thoroughly mashed

1/2 cnutritional yeast
-
1/2 cvegan soy milk
-
3 Tbspvegan mayonnaise
-
1 tsppaprika
-
1 tspsalt
-
3/4 tspspike seasoning
-
1/2 tspdry mustard
How To Make vegan ricotta "cheese"

1Melt margarine on stove on medium heat.

2Add the mashed tofu, mix, turn up temp.

3Add yeast, paprika, salt, mixed seasoning, mustard powder, and mayo, and mix well.

4Saute for 3-4 min. then add soymilk, lower temp and let simmer 5 min, stirring occasionally.

5Serve!
