sweet zucchini relish

This is from Mrs. Debbie Moyer, Auburn, PA. This is a very unique relish and so versatile. Try it on hot dogs, in macaroni salad or potato salad. On or in anything you use a sweet pickle relish.

Ingredients For sweet zucchini relish

  • 10 c
    grated zucchini, about 5 lbs, no need to peel
  • 4 c
    chopped onion
  • 1/4 c
    salt
  • 5 c
    sugar
  • 2 1/4 c
    white vinegar
  • 1 Tbsp
    celery seeds
  • 1 Tbsp
    ground turmeric
  • 1 Tbsp
    black pepper

How To Make sweet zucchini relish

    Combine the first 3 ingredients in a large bowl, cover, and refrigerate at least 8 hours or overnight.

    Transfer zucchini mixture to a colander, rinse under cold water, drain well, and press extra moisture out between 2 layers of paper towels.

    Combine the well drained zucchini mixture, with the remaining ingredients in a large pan. Bring to a boil over medium-high heat; reduce heat to medium, and simmer 30 minutes, stirring often.

    Pack hot mixture into hot, sterilized jars, filing to 1/2 inch from the top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, screw on bands.

    Process in boiling water bath, 15 minutes. Yield should be 9 half pints.
