first tried this when my mother was hosting a dinner party. She had asked me to spread it on party rye bread slices for her. Of course, I had to try it and it was delicious!! Light and refreshing and the party guests all woofed it down and many asked for the recipe. This is very easy to make. My kids like it on Ritz or Triscuit crackers.

Ingredients For benedictine spread

  • 8 oz
    cream cheese, room temperature
  • 1 Tbsp
    hellmann's mayonaise
  • 2
    drops green food coloring
  • 1/2 md
    onion, finely grated
  • 1 lg
    cucumber, peeled and seeded
  • 1-3 dash
    tobasco sauce
  • 1 pkg
    party rye bread
  • assorted crackers

How To Make benedictine spread

    Grate the cucumber. Place in cheesecloth and squeeze liquid out. Set aside.

    In a medium bowl, beat cream cheese til fluffy. Stir in cucumber and remaining ingredients except for the bread and crackers. Adjust the consistancy with more or less mayonaise. (I prefer a bit more mayo).

    Cover and chill at least 4 hours (overnight is better). Spread Benedictine on bread. You can top them with a thin slice of green olive or roasted red pepper. Place some in a bowl with crackers for dipping.
