Ingredients For fresh peach salsa

  • 1/2 c
    white vinegar
  • 6 c
    peeled pitted chopped peaches
  • 2 md
    red onions chopped
  • 4 clove
    garlic chopped
  • 2
    jalapenos seeded and chopped
  • 1 md
    red bell pepper seeded and chopped
  • 1 c
    chopped fresh cilantro
  • 2 tsp
    cumin
  • 1/2 c
    honey

How To Make fresh peach salsa

  • 1
    Score an X on the bottom of each peach and place in boiling water for 3 minutes and let cool a bit. This will make it easy to just peel the skin right off.

    Place the peaches, red onion, garlic, jalapenos and red bell pepper in food processor and pulse until very fine dice.

    Place the peach mixture in saucepan and add the honey, cumin, and vinegar. Bring to a boil and simmer on low for 20 minutes. Remove from heat and stir in cilantro

    Ladle in jars and process in water bath for 15 minutes. Makes 4 pint jars
