1/2 call purpose flour

2 tsptarragon, dried

1 1/2 tspsalt

1 tsppepper

2rabbits (2 to 2 1/2 pounds each) cut up

1/4 cbutter (or margarine)

1/4 ccooking oil

2 cchicken broth

1/4 cparsley flakes (optional)
How To Make rabbit with tarragon sauce

1In a resealable plastic bag, combine flour, tarragon, salt and pepper. Add the rabbit pieces, one at a time, and shake well.

2In a large skillet,, melt butter; add oil. Saute the rabbit pieces, a few at a time, until browned

3Add broth; cover and simmer for 50 to 60 minutes, or until tender. Thicken the pan juices if desired, and use for gravy. Pour gravy over rabbit and serve immediately. Sprinkle parsley flakes over all. (optional)
