etcetera dip

The method is as important as the ingredients in this one! I have been trying for a while to make the "perfect dip" and I think I've come pretty darn close! Don't omit the butter, or lemon zest, or the baking for 5 minutes, or anything else in this one... it all has a purpose to make this dip wonderful! Be careful with that onion juice...it is super salty and potent... anything more that 1/8 tsp will make the dip salty! I call it etcetera dip because I went through many ingredients, etcetera, for the last few years in trying to perfect it! :)

Ingredients For etcetera dip

  • 8 oz
    cream cheese, room temperature
  • 1 1/2 c
    mayonnaise
  • 2 Tbsp
    butter, unsalted
  • 1 pkg
    ranch seasoning (i used kraft)
  • 1/8 tsp
    pepper
  • 1/8 tsp
    paprika
  • 1/4 tsp
    adobo powder
  • 1 c
    spinach, choped
  • 1/4 c
    scallions, chopped
  • 1/4 c
    parsley, chopped
  • 1/8 tsp
    onion juice
  • 1 1/2
    roma tomatoes, diced fine
  • zest of one lemon
  • extra scallion and parsley for garnish
  • additional optional garnish: chopped / grated pistachios

How To Make etcetera dip

  • 1
    In mixing bowl (not plastic), stir up cream cheese by itself to get it fluffy. Add butter on top. Place in warm oven (about 250*) for 5-7 minutes.

    Take out of oven; mix it up well. Add mayonnaise and keep mixing until the cream cheese, butter and mayo are all incorporated.

    Add ranch, pepper, paprika, adobo and onion juice. Mix well.

    Add chopped veggies. Mix well.
  • 5
    Zest one lemon over the top of dip. Cover and let chil for at least 2 hours before serving.

    Add extra scallions and parsley prior to serving, if desired.
