Ravigote is a classic french dressing mostly served with boiled or poached fish, especially good over salmon, cheese, etc etc.

Ingredients For ravigote sauce

  • 1/4 c
    snipped green onions
  • 2 Tbsp
    butter, divided
  • 3 Tbsp
    dry white wine
  • 1 Tbsp
    vinegar
  • 1 Tbsp
    all purpose flour
  • 1 c
    light cream
  • 1/4 tsp
    salt
  • 1/4 tsp
    dried tarragon, crushed

How To Make ravigote sauce

  • 1
    Cook green onions in 1 tablespoon butter till tender. Add wine and vinegar. Simmer, reducing liquid by half.

    Melt 1 tablespoon butter, blend in flour. Add light cream. Cook and stir till mixture bubbles. Remove from heat, stir in salt, and tarragon.

    Return to low heat; gradually stir in onion mixture. DO NOT BOIL.
