Sawmill Gravy with cathead biscuits is a delicious and indulgent breakfast. Sawmill Gravy is a white gravy that's creamy with bits of savory sausage in every bite. It's poured over easy-to-make big and fluffy cathead biscuits. Why are they called cathead biscuits? The name refers to the size of the biscuits - they're as big as a cat's head. Serve this Southern staple for a weekend or holiday breakfast.

Ingredients For sawmill gravy with cathead biscuits

  • SAW MILL GRAVY
  • 1 lb
    breakfast sausage
  • 2 Tbsp
    all-purpose flour or more (depends on how much you want to make)
  • milk
  • salt and pepper, to taste
  • CATHEAD BISCUITS
  • 2 1/4 c
    all-purpose flour
  • 1/3 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    baking powder
  • 5 Tbsp
    lard
  • 1 c
    buttermilk

How To Make sawmill gravy with cathead biscuits

  • Brownie sausage patties.

    For gravy: Make sausage into patties and fry in moderately hot skillet until brown and cooked. Put sausage patties on paper towels to drain the grease.
  • Browning flour in the sausage grease.

    Use about half of the grease in the skillet to make gravy. Add flour and brown flour in grease stirring constantly.
  • Milk added to the flour.

    Add about 1 1/2 cups of milk and enough water to make gravy as thin as you like.
  • Crumbled sausage, salt, and pepper added to the milk.

    Break up about 4 of the cooked sausage patties and crumble in the gravy. Salt and pepper to taste. Serve over hot biscuits.
  • Dry ingredients, lard, and buttermilk mixed to form a dough.

    For cathead biscuits: Sift and mix dry ingredients then blend with lard. Add buttermilk.
  • Dough portioned into balls and in a baking dish.

    For each biscuit, pinch off a portion of dough the shape of a large egg. Pat out with your hands.
  • Baking the cathead biscuits.

    Bake for about 10 minutes. Bake at 350 F in a wood stove or 475 F in an electric or gas stove.
