My Aunt Ina loved poppy seed dressing on her salad. Here is her version of homemade poppy seed dressing. Its surprisingly refreshing and tangy. Yumm..... Please forgive the picture. Sometimes its hard to get a good picture. This dressing is the color of canola oil with ground mustard and seeds.

In a large blender container place vinegar, sugar, onion, salt, and mustard. Cover and process until smooth. Gradually add oil through the hole in the top of blender so as not to have dressing flying all over kitchen. :) When all these ingredients are blended smooth, stop blender. Pour into bottle or bowl and stir in poppy seeds by hand. Refrigerate until using on tossed salad or spinach salad.
