This dip can be made ahead and after having any leftovers reheat slightly and spread over crusty bread oooooh so good.

Ingredients For cheese dip with caramelized onions.

  • 2 md
    yellow cooking onions
  • 2 c
    old cheddar cheese
  • 2 tsp
    vegetable or canola oil
  • 2 Tbsp
    all purpose flour
  • 1/4 tsp
    cayenne pepper
  • 1 1/2 c
    lager ale
  • 1 Tbsp
    dijon mustard
  • 4 slice
    side bacon cooked crisp and crumbled
  • 4 Tbsp
    pure maple syrup
  • 4
    green onions finely sliced
  • 1/2 c
    yellow cheese curds or cheese of your preferance and chopped

How To Make cheese dip with caramelized onions.

    Peel onions and cut into 1/4 inch slices. heat oil in heavy or iron skillet on medium heat, add onions, stir, cover cook for about 15 minutes stirring occasionally, onions should be browned and softened.

    In large bowl combine cheddar, flour and cayenne, add ale and mustard to onion mixture, stir cheese mixture to skillet and stir to combine,,add rest of cheese and curds and cook and stir until cheese has melted..remove from heat.

    Recipe can be made to this point and then placed on top shelf of heated barby, stirring occasionally for 8 to 10 minutes until cheese has melted. To serve sprinkle top of cheese mixture in skillet with bacon, green onions and maple syrup. Have crusty bread, blanched broccoli, sweet green peppers and any other vegie you have on hand. leftovers can be reheated and recipe can also be cut in half.
