This is one of my families summer favorites. It's cool and refreshing, not heavy on the tummy.

Ingredients For pretty good salad "orzo" you say

  • 1 pkg
    orzo (16 oz)
  • 1 pkg
    spinach leaves (10 oz)
  • 1 pkg
    crumbled feta (12 oz)
  • 1/2
    red onion, finely chopped
  • 2/3 c
    toasted pine nuts
  • 1/2 tsp
    dried basil (or fresh if you have it)
  • 1/4 tsp
    white pepper
  • 1/2 c
    olive oil
  • 1/2 c
    balsamic vinegar
  • 1 tsp
    fresh parsley, minced

How To Make pretty good salad "orzo" you say

    Cook orzo, boil 9 minutes, drain and rinse with cold water.

    Toast pine nuts, be careful not to burn.
  • 3
    Mix spinach, feta, onion, and pine nuts. Reserve in bowl.
  • 4
    Combine oil, vinegar, white pepper, basil, and parsley. Stir well.
  • 5
    Mix orzo with spinach mix. Pour dressing over salad.
