This is a great picnic or BBQ salad. Kids like it because of the colors and cheese. You can add any veggies you like to it, I have added broccoli florets and it was delicious!

Ingredients For mom's macaroni salad

  • 8 oz
    1- 8 oz. package of small pasta, cooked according to package directions and drained
  • 1/2 lb
    colby or cheddar cheese, cubed in small squares
  • 1 Tbsp
    pimento, chopped
  • 1/2
    medium green pepper, diced
  • 1/2 c
    dill pickle relish
  • 1 c
    broccoli florets, cut in bite sized pieces (optional)
  • 1
    large or 2 small dill pickles cut in small pieces
  • 1/2 can
    celery, diced
  • 1/4 c
    olives, green with pimentos sliced
  • 1/4 c
    black olives, sliced
  • 1/4 c
    onion, finely chopped
  • 2 Tbsp
    shredded carrots

How To Make mom's macaroni salad

    Prepare macaroni according to directions on the box. Drain and set aside in a large bowl.

    DRESSING: In a medium sized bowl combine for dressing: 1/4 tsp salt, 1 tsp pepper, 1 tsp sugar, 1 c lite mayo and 1/4 cup mustard, brown or yellow. Stir well.

    Cut all vegetables into small cubes or bite sized pieces. Add to macaroni in large bowl. Pour dressing over macaroni and other ingredients. Stir gently. Refrigerate for at least 3 hours before serving. Store leftovers in a tightly sealed container in refrigerator.
