pea and peanut salad

I posted this for my friend Baby Kato. I was telling her about it and she requested the recipe. It's one of my real favorites and you won't believe how unbelievably good it is until you taste it! Honestly I was a bit reluctant when a friend gave it to me and made me promise to try it. WOW, was I ever glad she did.

Ingredients For pea and peanut salad

3/4 clow-fat mayonnaise (personally i like 1/2 a cup)

2 Tbspminced green onions

1 Tbsplemon juice

10 ozfrozen peas
-
10 ozspanish peanuts
How To Make pea and peanut salad

1Mix the first 3 ingredients together and chill 1-2 hours.

2Under cook the peas (I just run hot water over them to defrost).

3Drain well and chill peas until cold.

4WHEN READY TO SERVE:

5Mix the peas and peanuts (you should have an equal volume of both).

6Stir the dressing in and serve at once (Do NOT mix in the dressing early).
