Everyone needs a recipe for that hot summer day when you need something to cool you off a bit. Recipe would be great served at a swimming party or Ladies Luncheon. Any kind of fruit can be used to make this.

Ingredients For summer fruit salad

  • 2 c
    cooked rice, cooled
  • 1/2 c
    quartered strawberries
  • 1/2 c
    grape halves
  • 2
    kiwi fruit, sliced into quarters
  • 1/2 c
    pineapple tidbits
  • 1/2 c
    banana slices
  • 1/4 c
    pineapple juice
  • 1/2
    honeydew melon, quartered
  • 2 Tbsp
    plain nonfat yogurt
  • 1 Tbsp
    honey
  • lettuce leaves

How To Make summer fruit salad

  • 1
    Combine rice and fruit in large bowl. Blend pineapple juice, yogurt, and honey in small bowl. Pour over rice mixture; toss lightly. Serve on lettuce leaves.
