susie's potato salad

This is a spiced up potato salad. I made it up many years ago. I made it many times and did it a little different each time, but I wrote it down and now make it like this. It was my secret but why just let my family and friends be the only one to taste it. Every one should enjoy it.

Ingredients For susie's potato salad

  • 10
    medium potatoes boiled
  • 3 to 4
    celery stalks
  • 1 lg
    onion
  • 3 to 4 lg
    dill pickles
  • 6
    hard boiled eggs
  • DRESSING
  • 1/4 c
    dill pickle juice
  • 1/2 jar
    32 oz mircle whip
  • 2 to 3 Tbsp
    mustard, spicy brown or yellow
  • 2 pkg
    dry good seasons zesty italian dressing mix
  • 2 Tbsp
    dry dill
  • 2 Tbsp
    honey
  • 1 Tbsp
    garlic powder
  • salt and pepper to taste
  • TOPPING
  • 1 tsp
    paparika
  • 1 sm
    can of sliced black olives (optional)

How To Make susie's potato salad

  • 1
    Chop first 5 ingredients into a large bowl. Chop potatoes and pickles in a larger chop.

    Mix all dressing ingredients in a small bowl
  • 3
    Pour into large bowl and mix together
  • 4
    Sprinkle with paparika and place black olives in 1 layer on top
  • 5
    Chill for several hours and serve
