I've never had a potato salad exactly like my mom's. The potatoes are shredded instead of diced or cubed and the dressing is sweet and tangy instead of savory. Our summer family gatherings ALWAYS include her potato salad and we all love it! I recommend tasting the dressing before adding it to the potatoes - my mom never measures the ingredients but these measurements are as close as I could get!

Ingredients For mom's potato salad

    potatoes - cooked, peeled, shredded & chilled
  • 4
    hard-boiled eggs, diced and chilled
  • 2
    celery stalks, diced
  • 1 sm
    yellow onion, diced finely
  • DRESSING
  • 2 c
    miracle whip
  • 3 Tbsp
    yellow mustard
  • 1/2 c
    sugar
  • 1 tsp
    vinegar
  • salt to taste
  • paprika to garnish

How To Make mom's potato salad

    Cook potatoes and eggs; chill before combining with remaining ingredients.

    Mix dressing ingredients and chill. Taste before adding to potatoes and adjust flavors as desired.

    Dice celery and onion; combine with shredded potatoes and diced eggs.

    Stir in dressing. Garnish with a few shakes of paprika and keep chilled before serving.
