green onion potato salad

My mother used to make a great potato salad and she would sneak jalapenos into it sometimes. When I was a kid I didn't care for jalapenos but love them now. I changed only the amount of peppers to this recipe. 2 seems just right for my family but depending on your taste for "hot" you can add more or less.

Ingredients For green onion potato salad

  • 2 lb
    new red potatoes
  • 1 Tbsp
    plus 2 tsp kosher salt divided
  • 1 1/4 c
    real mayonnaise
  • 2 Tbsp
    white wine vinegar
  • 1 or 2 md
    jalapeno peppers chopped
  • 2 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 6 md
    green onions, thinly sliced
  • 1/4 c
    fresh cilantro (or parsley) chopped (i use cilantro)

How To Make green onion potato salad

    Cook potatoes with 1 TBSP salt until tender; drain and cool slightly. Slice. Combine mayonnaise, vinegar, jalapeno peppers, salt and black pepper in large bowl. Stir in remaining ingredients and toss gently.

    You can serve this warm or cold. We like it cold.
