This was always a favorite made during Thanksgiving and Christmas in our house, but you can make it anytime, even for picnics. I like to use tricolor rotini, bow tie pasta or medium shell pasta. Some people use small elbow macaroni.

Ingredients For pasta salad (southern name -- macaroni salad)

1 boxmacaroni, cooked

1 cdiced onion
-
1 cdiced tomato
-
1 smdiced cucumber (pickling)

1 Tbspsweet pickle relish

3 Tbspmayonnaise

salt and pepper to taste
How To Make pasta salad (southern name -- macaroni salad)

1Using a large pot, cook pasta until tender. Using a colander, drain pasta and run cold water over the pasta to cool it down for about a minute. Pour pasta back into the pot.

2Add all ingredients. Stir in mayonnaise. Stir until well mixed. Salt and pepper to taste. Cover and refrigerate.

3Before serving, stir again to make sure the pasta is well covered. You may want to add another tablespoon of mayonnaise.

4If you don't like onion or tomatoes, you can omit them. Personally, I think it makes the salad.
