pasta salad (southern name -- macaroni salad)

This was a side dish our mom always made at Thanksgiving and on Christmas Day. It was a tradition. I like to use the tricolor pasta. But you can use small or medium shell pasta or the bowtie pasta. Enjoy.

Ingredients For pasta salad (southern name -- macaroni salad)

  • 1 box
    tricolor pasta
  • 1 md
    tomato, diced
  • 1 sm
    onion, diced
  • 2 sm
    pickling cucumbers, diced
  • 1 Tbsp
    pickle relish, sweet
  • 2 Tbsp
    mayonnaise

How To Make pasta salad (southern name -- macaroni salad)

    Cook pasta until tender. Drain pasta using a colander. Run cold water over the pasta for 4 minutes. Using the pot you cooked the pasta in, pour pasta back into the pot.

    Add ingredients and stir to mix very well. Add the mayonnaise and stir again, mixing very well. Salt and pepper to taste. Pour into a large bowl, cover and refrigerate.

    Prior to serving, stir again as you may need to add another tablespoon of mayonnaise.
