My son begs my grandma to make this salad on a regular basis. If I make it, he says it's not G.G.'s mac salad. I'm posting it as she makes it.

Ingredients For macaroni salad

1 pkg16 oz. salad macaroni

1 ccelery, diced

1/2 cred onion, diced

1/2sweet onion, diced

1 csmoked cheddar cheese, diced

1 cgouda cheese, diced
-
1/2 cparmesan cheese, grated

1 cdill pickley, diced small
-
1 cdry salami, diced
-
1 csliced black olives
-
1 Tbspminced garlic
-
1/4 tsphorseradish, prepared

1/2 tspwhite pepper, ground

1 tspblack pepper, ground
-
1/2 tspcayenne pepper
-
1/2 tspdry mustard
-
garlic salt or regular sea salt, to taste

1/4 tspcelery salt

13 oz. jar diced pimentos, rinsed and drained

3 Tbspcapers, diced
How To Make macaroni salad

1Add 2 quarts of water to a medium stockpot and bring to a boil.Add macaroni and cook until it is al dente, approximately 9 minutes.Do not overcook the pasta or it will fall apart when the salad is tossed together.Rinse macaroni until cool.

2Add pasta to a large bowl. Carefully fold in celery, onion, cheddar, Swiss cheese, Parmesan, dill pickles, salami, pimentos, capers, and black olives. Refrigerate the mixture, covered, overnight (or refrigerate for at least 2 hours).

3Mix the garlic salt (or the sea salt), minced garlic, white pepper, black pepper, cayenne pepper, dry mustard, celery salt and 1 cup of mayonnaise in a bowl until well combined. Taste to dressing to make sure the seasonings are to your liking and adjust where needed. Cover and refrigerate for 2 hours or overnight.

4Add the pimentos to the salad and the dressing, stir to combine add 1/2 cup or more of mayonnaise if needed.
