I got this recipe from a good friend years ago and the artichokes and sun dried tomatoes make this salad very tasty.

Ingredients For artichoke italian pasta salad

  • 8 oz
    spaghetti pasta ; cooked and drained
  • 1/2 c
    roasted or sun dried tomatoes
  • 1/2 c
    canned artichoke hearts ; drained
  • 1/4 c
    kalamata (greek) olives ; sliced
  • 1/4 c
    mayonnaise
  • 1/4 c
    apple cider vinegar
  • 1/4 c
    light olive oil
  • 1 Tbsp
    honey
  • 1 pkg
    zesty italian dressing mix

How To Make artichoke italian pasta salad

    For the sauce : Mix the mayonnaise , vinegar , olive oil , honey together until smooth and creamy.

    Toss the pasta , olives , artichokes , and the olives in a large mixing bowl and pour dressing on top and mix throughly.

    Can be served immediately or chilled.
