Ingredients For sweet and sour squash salad

    yellow squash, sliced thinly
  • 2
    zucchini, sliced thinly
  • 1 c
    celery, chopped fine
  • 1 c
    red onion, chopped fine
  • 1/2 c
    green bell pepper, chopped fine
  • 1 can
    cannelini beans, rinsed and drained
  • DRESSING
  • 3/4 c
    sugar
  • 1/4 c
    apple cider vinegar
  • 1/4 c
    olive oil
  • 2 Tbsp
    ranch salad dressing mix
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper

How To Make sweet and sour squash salad

    Combine all vegetables in large salad bowl.

    Combine dressing ingredients in a bowl and whisk until sugar is dissolved.
  • 3
    Pour over salad and toss well. Refrigerate 12 hours before serving. Serve with slotted spoon.
