Ingredients For shrimp and rice salad

  • 1 bag
    (2 cups) uncle ben's brand boil-in-bag rice
  • 1 1/4 c
    snow peas
  • 1/2 lb
    cooked, peeled, deveined shrimp
  • 1 c
    sliced celery
  • 1/2 c
    reduced fat mayonnaise
  • 1/2 c
    thinly sliced carrots
  • 1/2 c
    diced red bell pepper
  • 1 Tbsp
    fresh lemon juice
  • black beans (optional)
  • carrots (optional)

How To Make shrimp and rice salad

    Cook rice according to package directions. Rinse under cold running water to cook; drain.

    Meanwhile, slice snow peas into 1-inch lengths. In a medium bowl, combine snow peas and remaining ingredients.

    Add cooked rice; mix well. Serve immediately or chill until ready to serve.
