In looking for authentic NY Deli coleslaw, I found a lot of controversy as to whether mayo is or is not acceptable. This one comes from the Pro-Mayo group! (Based on Mitch Weinstein's Honest Cooking blog.)

Ingredients For honest coleslaw

  • 1 bag
    red and green cabbage mix, with carrots
  • 1 Tbsp
    kosher salt
  • 1/4 c
    mayonnaise
  • 1/8 c
    vinegar (rice wine, white wine - use a good vinegar)
  • 1 Tbsp
    sugar
  • 1/4 tsp
    celery seed
  • 1/4 tsp
    freshly ground black pepper
  • 1 Tbsp
    chopped parsley

How To Make honest coleslaw

  • 1
    Toss cabbage mixture with salt in a colander. Cover the colander with a plate and put a heavy can on top. Let it sit for a good 3 - 4 hours, then squeeze dry.

    Squeeze cabbage dry with a clean towel, toss with dressing.
