I love the English Cucumbers for their thin skin, and the small seeds that they have in them when compared to the regular ones. Either type will work well in this recipe. I decided to make this healthy salad for our dinner, and it is so simple and easy to make using the Extra Virgin Olive Oil with the Apple Cider Vinegar, and no calorie sweetener packets. I even threw in some Chia Seeds to add a bit of fiber to the salad. We love it, and so did my neighbor. I hope you like it too.

    green onions, chopped
  • 1 md
    red onion chopped
  • 1 lg
    tomato, cubed
  • 3-4 md
    mini sweet peppers, chopped
  • 2 md
    english cucumbers, sliced thinly
  • 1 Tbsp
    garlic juice, or 2 cloves minced
  • 1/2 c
    apple cider vinegar
  • 1 c
    extra virgin olive oil
  • 2 Tbsp
    chia seeds
  • 4 pkg
    zero calorie sweetener

    Prep all of the vegetables into desired sizes.

    Add the olive oil and apple cider vinegar to a large bowl, then whisk together till blended. Then add in the Chia seeds and no calorie sweetener and whisk to combine.

    Now pour the salad dressing mixture over the veggies and stir to coat. Cover and allow to marinate at least an hour before you are ready to serve if time permits. Then serve and enjoy.
