This makes a delicious and refreshing Summer salad---great for a picnic supper on the patio. Corn bread made with mild green chilies and a pitcher of Margaritas make excellent accompanyments.

Ingredients For best taco salad

  • 1 lb
    lean ground beef
  • 1 pkg
    taco seasoning mix
  • 1/3 c
    water
  • 1 bunch
    romaine lettuce head, chopped
  • 4 md
    green onions, sliced
  • 1 md
    red onion, chopped
  • 15 1/2 oz
    black beans, drained & rinsed
  • 1 lg
    tomato, chopped
  • 1 md
    avocado, peeled, pitted & cubed
  • 1 c
    cheddar cheese, shredded
  • 1/2 c
    black olives, sliced
  • 1/2 c
    catalina dressing
  • 1 1/2 c
    fritos corn chips

How To Make best taco salad

  • 1
    Brown ground beef and add taco seasoning mix and 1/3 cup water. Simmer 10 minutes until thickened. Set aside. In a large salad bowl, combine lettuce, red onion, green onion, black beans, tomato, avocado, black olives and cheese. Mix in ground beef/taco mixture. Just before serving, add the corn chips and enough Catalina dressing to moisten. Toss well and serve immediately.
