We eat it as a salad have seen it served with crackers and scoops!

Ingredients For bean salad

  • DRESSING
  • 1/2 c
    olive oil
  • 1/2 c
    sugar
  • 3/4 can
    apple cider vinegar
  • salt and pepper
  • SALAD
  • 1 c
    chopped sweet pepper
  • 1 c
    green onion
  • 1 c
    celery chopped
  • 1 can
    black beans drained and rinsed
  • 1 can
    lentils or other beans drained and rinsed
  • 1 can
    niblets corn

How To Make bean salad

  • 1
    Put all salad ingredients in a large bowl.

    Mix the dressing ingredients in a small pot and bring to a boil, stir until sugar dissolves.

    Cool mixture for 20-25 min. and then pour over veggies.Mix well. Enjoy
