1 mdred pepper, julienned

1/2 csliced fresh mushrooms

1/4 cchopped salted peanuts

2green onions, sliced

1 Tbspchopped fresh mint (or 1t dried mint)

1 Tbspchopped fresh cilantro

1/3 chot water

3 Tbsprice vinegar

2 Tbsppeanut butter

2 Tbspsoy sauce
-
1 Tbspdark sesame oil

1 clovegarlic, minced

1/8 tspground red pepper (or 1 thai pepper, minced)

chopped fresh cilantro, garnish

chopped unsalted peanuts, garnish
How To Make thai chicken salad

1Combine rice, chicken, spinach, red pepper, mushrooms, peanuts, green onions, mint and cilantro in large bowl.

2Combine water, rice vinegar, peanut butter, soy sauce, sesame oil, garlic and ground red pepper in small bowl.

3Just before serving pour dressing over salad; toss.

4Garnish with cilantro and peanuts.
