Ingredients For chicken & cheese crunch salad

  • 2 c
    romaine lettuce leaves, chopped
  • 4 oz
    grilled chicken
  • 1/2 c
    cucumber, chopped
  • 1/2 c
    mushrooms, sliced
  • 1/4 c
    carrot, shredded
  • 1/2 c
    string beans
  • 1 Tbsp
    raisins
  • 1 Tbsp
    almonds, slivered
  • 2
    ry-krisp or wasa
  • 1
    swiss laughing cow light wedge
  • 1 tsp
    olive oil
  • flavored vinegar to taste (optional)
  • fresh squeezed lemon juice to taste (optional)

How To Make chicken & cheese crunch salad

  • 1
    Top bowl of lettuce with chicken, cucumber, mushrooms, carrots, string beans, raisins & almonds. Spread a cheese wedge on the crackers & break them into pieces (creating "cheesy croutons). Drizzle oil over salad along with flavored vinegar or lemon and mix.
