I made Mexican last night for my family but since I'm dieting I didn't want all the fat and carbs in the meal I made them so I made mine into a salad. I did make mine using fat free ingredients and it was still great.

Ingredients For taco salad

  • 2 c
    chopped leaf lettuce
  • 1/2 c
    fresh mexicorn
  • 1/4 c
    bleack beans rinsed and drained
  • 1
    roma tomato, chopped
  • 1/8 c
    sweet red onion diced
  • 1/4 c
    sliced ripe olives
  • 1/8 c
    green pepper, diced
  • 1/8 c
    red pepper, diced
  • 1/2 c
    taco meat (chicken,beef, or tvp)
  • salas, sourcream, guacamole,shredded cheddar cheese to taste

How To Make taco salad

  • 1
    Layer lettuce, mexicorn, black bean,sliced ripe olives,tomato, peppers, taco meat, and additions. And enjoy.
