Ingredients For russ's german potato salad

  • 2 1/2 C. water
  • 1/3 C. cider vinegar
  • 1 Tbs. salt
  • 1/2 C. sugar
  • 3 Tbs. cornstarch
  • 1/2 C. bacon, diced (with drippings)
  • 1/2 C. onions, diced
  • 1/2 C. green peppers, diced
  • 1 Tbs. parsley
  • 1/4 tsp. pepper
  • 5 lbs. cooked potatoes (may be sliced)

How To Make russ's german potato salad

  • 1
    Place 2 cups water, vinegar, salt and sugar in a saucepan. Heat to boiling. Mix cornstarch and 1/2 cup of water, add to saucepan mixture and boil until thickened. Stir in bacon. Add cooked potatoes. Stir. Add onion, green peppers, parsley, and additional salt and pepper to taste.
