rich cashew turkey casserole

Warning: this is a rich dish! But it is also easy and tasty, and a good way to use up leftover Thanksgiving turkey. I usually serve this with rice or noodles to soak up the sauce, a green salad, rolls and a light dessert, such as sherbet. I hope you enjoy! Representative photo by Bing.

Ingredients For rich cashew turkey casserole

  • 1/2 - 3/4 c
    soft bread crumbs
  • 1 c
    cashews, coarsely chopped
  • 1 c
    cream
  • 1/4 tsp
    sage
  • 1 and 1/2 tsp
    salt
  • pepper to taste
  • 1/4 c
    packed parsley
  • 2 Tbsp
    sherry (optional)
  • 2 c
    diced cooked turkey

How To Make rich cashew turkey casserole

    Pre-heat oven to 350 degrees; grease a baking dish.

    Place in blender container the cream, sage, salt, pepper, parsley, and sherry, if using. Blend for a few seconds until parsley is chopped.

    Scatter 1/2 of the chopped cashews onto bottom of baking dish. Cover with one cup of the turkey. Top with the rest of the cashews and the remainder of the turkey. Cover the turkey with the cream mixture. Top evenly with the bread crumbs.

    Bake uncovered at 350 degrees for about 25 minutes, or until lightly browned and heated through.
