What can I say I'm an Italian that loves Mexican food. For that matter any Spanish or Latin flavors too. This is a great alternative to regular meat loaf and is light too. Enjoy!

Ingredients For mexican turkey loaf

  • 3 lb
    ground turkey
  • 12 oz
    chopped green chilis (3-4 ounce cans)
  • 1 1/2 c
    bread crumbs
  • 1 c
    salsa
  • 1 c
    shredded colby cheese
  • 1/2 bunch
    chopped fresh parsley
  • 2 Tbsp
    worcestershire sauce
  • 3 tsp
    chili powder
  • 1/8 tsp
    pepper
  • 3 lg
    eggs
  • extra salsa for garnish

How To Make mexican turkey loaf

    Preheat oven to 375 degrees.
  • 2
    Mix all ingredients and shape into a loaf in a 9" X 13" pan. Can also be made in 2- 9" X 5" loaf pans sprayed with non stick cooking spray.

    Cover and bake for 1 hour to 1 hour and 15 minutes or until juices run clear and center is set. Remove cover and bake for additional 15 minutes until top browns.

    Let stand for 15 minutes before slicing. Serve with extra salsa over top.
