My daughter and I love the really fresh taste and the zing of the crunchy peanut dipping sauce. Yum. It's great when you can find something guilt free that tastes so good! You will want to keep this easy dipping sauce for other things too, it's awesome!

Ingredients For avocado & prawn rice paper rolls

  • 2
    avocados, peeled and cut into 12 slices
  • 2 Tbsp
    lemon juice
  • 12 lg
    rice paper wrappers, softened in warm water
  • 24
    mint leaves
  • 12 sprig
    spring onions, green parts (cut about 4" long)
  • 1 c
    bean sprouts (drained from tin is fine)
  • 1 c
    soft green lettuce, shredded
  • 12
    cooked plain shrimp (king prawns) peeled & halved lengthwise
  • DIPPING SAUCE
  • 2 Tbsp
    hoisin sauce
  • 1 Tbsp
    crunchy peanut butter
  • 2 Tbsp
    water
  • 1 sm
    clove garlic, crushed
  • 2 tsp
    sweet chilli sauce

How To Make avocado & prawn rice paper rolls

    Prepare all the ingredients and put into small bowls beside you on a table. Put warm water in a large shallow dish and have it in front of you. Place a large dinner plate in front of you and have a large serving platter nearby.

    Take one rice paper sheet and sit it in the warm water for a minute, until it starts to feel soft and a little spongy. Lift up and let the water drain off, then carefully place it on the dinner plate (it's delicate). In the middle of the rice paper put a little bit of all the filling ingredients, layering them on top of each other (lettuce, bean sprouts, mint leaves, spring onion, avocado, and prawns). Roll it up like an envelope, stretching the rice paper a little as you go. It will stay in place when you are finished rolling. Put each one onto a serving platter.

    Next make the dipping sauce by combining all the ingredients and stirring until smooth. Serve in a small bowl with a spoon. Serve a spoonful on the side of your plate to dip the rolls into.
