I am not going to get into a debate over MSG. The characteristic flavor ("unami") of Japanese mayonnaise comes from the addition of MSG. In addition, Japanese mayonnaise is made with egg yolk only. You can get a reasonable reproduction of Japanese mayonnaise by adding about a teaspoon of soy sauce (which also contains MSG), miso, malt vinegar, Chinese black vinegar or Worcestershire sauce to regular mayonnaise. 4 slicesandwich bread (crusts trimmed if desired)

2hardboiled eggs

3 Tbspjapanese mayonnaise (kewpie™, for ex.)

1/2-1 tspsoy sauce or substitute (read recipe introduction)

cracked black pepper, to taste
How To Make tamago sando

1Peel the hardboiled eggs.

2Transfer eggs to a prep bowl and mash. Add the mayonnaise, (soy sauce or substitute if using) and cracked pepper. Mix well.

3Spread the mixture onto two slices of bread. Top with other bread slice.

4Slice sandwiches into 3 equal rectangle shapes.
