Ingredients For egg salad sandwich

1baguette, sliced in half lengthwise, ends removed, lightly toasted

2 Tbspmayonnaise

mixed greens
-
1/2avocado, pitted, skinned, thinly sliced

3hard boiled eggs, shelled and sliced

salt and pepper, to taste

red onion, thinly sliced, for garnish

gherkins, thinly sliced, for garnish
How To Make egg salad sandwich

1Spread mayonnaise onto both baguette halves.

2Top with mixed greens, avocado slices and egg slices. Season with salt and pepper.

3Top eggs with a small amount of red onions, micro greens and gherkins.

4Top sandwiches with baguette tops, gently pressing together and serve.
