squash "thingy"

Don't be deceived !! This dish is full of goodies beside just squash. Bell peppers, onions, squash, garlic, smoked sausage, yum!! You will love this if you like any of the above. Change the amount of rice cooked according to how many servings you need. Also, egg noodles can be used in the place of rice.

Ingredients For squash "thingy"

  • 2 Tbsp
    vegetable oil or olive oil
  • 4-6
    zucchini and yellow squash (mixed)
  • 1
    onion
  • 1
    green bell pepper, 2" strips
  • 1
    red bell pepper, 2" strips
  • 2 can
    tomatoes, stewed italian-style
  • 3/4 c
    medium or mild salsa
  • 5
    links smoked sausage, 1-2"slices
  • 3 Tbsp
    parsley flakes
  • 1 tsp
    sage or poultry seasoning
  • 1 Tbsp
    beef or chicken boullion power (or 1 cube dissolved in hot water)
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    salt
  • 1 c
    uncooked rice
  • 2 Tbsp
    garlic powder or 2 cloves, minced

How To Make squash "thingy"

    Cook rice according to package directions and keep warm. Do not add rice to other ingredients.

    In a large dutch oven or sauce pan, saute onions, bell peppers and squash for about 3 minutes in oil. Add tomatoes and salsa and set heat on simmer.

    Add the rest of ingredients and let simmer (boil gently) for about 30 minutes or until bell peppers are tender. Don't over cook.

    To serve, put 1/2 cup rice in plate and spoon squash/smoked sausage mixture over it.
