I made these for this week's Sandwich Challenge, which was using items that you already had in your fridge (5 ingredients) and pantry (5 ingredients). Fridge: Ham Egg Cheese Mayo Butter Pantry: Bread Mushrooms Onion Sriracha sauce Cayenne pepper Here is what I came up with. Hope you enjoy. I made these with my husband in mind because he loves spicy food. They turned out great and we had them with homemade potato chips and used the left over sauce as a dip. Since I have added Sriracha sauce to our kitchen pantry my husband puts it on everything, so I beat him to the punch.

Ingredients For some like it hot & all dressed up ham & cheese

  • 4 slice
    white sandwich bread
  • 12 slice
    oscar meyer delifresh brown sugar ham
  • 2 slice
    cheddar cheese
  • 2 lg
    eggs
  • butter
  • 4 oz
    sliced mushrooms, canned
  • 1/2 md
    vidalia onion, chopped
  • SPICY SRIRACHA MAYO
  • 1/2 c
    mayonnaise
  • 1 tsp
    sriracha sauce
  • 1/4 tsp
    cayenne pepper

How To Make some like it hot & all dressed up ham & cheese

    Sriracha Mayo Sauce: In small bowl mix together mayonnaise, sriracha sauce, and cayenne pepper. Place to the side until ready to spread onto sandwich.

    Sandwich: Add a pad of butter to hot skillet, then add onion and mushrooms. Saute until onions are translucent. Place veggies in bowl and set to the side.

    In same pan fry two eggs to preferred consistency. I fried our eggs so the whites were done but the yolk was still runny.

    Butter one side of each slice of bread and build sandwich: butter side down bread, slice of cheddar cheese, fried egg, 6 slices of ham, half of veggies, then sriracha mayo sauce (to taste), butter side up bread.

    Place sandwich on griddle or in a skillet and brown both side of the sandwich until lightly golden brown. Slice in half and enjoy!! Yummy! Yummy!
