Great for anything that pulled pork can go on. I always make this when my work place has any type of get together and I never have left overs to bring home.

Ingredients For slow cooked pork for tamales or sandwiches

  • 5-7 lb
    pork shoulder roast
  • 2-3 Tbsp
    oil
  • 62 oz
    vegetable or pork stock
  • 4 Tbsp
    cumin or toasted cumin
  • 4 Tbsp
    salt
  • 3 Tbsp
    chili powder, homemade if possible
  • 1 Tbsp
    liquid smoke (optional)
  • 2 lg
    white onions
  • 1
    green bell pepper
  • 1
    red bell pepper
  • 1 Tbsp
    adobe sauce (optional for added heat)
  • any other peppers to add heat to the pork

How To Make slow cooked pork for tamales or sandwiches

    Cover the pork shoulder in 2 tablespoons each of salt and cumin.

    In a Dutch oven or cast iron skillet, heat up the oil and sear the pork. Make sure to sear all sides and not just the top and bottom.

    If using a Dutch oven, heat the oven up to 250 and take the Dutch oven off heat. If using a slow cooker, move the pork to it now.

    Add the stock, the rest of the cumin and salt, and all other ingredients to the pot.

    Cover and cook in oven for 6 hours. In a slow cooker, cook between 6 to 8 hours on low.

    Once done, drain the juice (I save my to make soup), pull apart meat and mix the ingredients cooked with the pork if desired.

    Add you favorite BBQ sauce or eat as is. I use Bull's Eye Memphis Style BBQ, with a tablespoon more cumin and 1/2 tablespoon homemade chili powder added to it.
