My husband, Roger Schmidt, loves lasagna so over the years I have tried this recipe or that recipe and finally I have come up with a lasagna recipe that Roger voted as the best.

Ingredients For roger's lasagna

  • 1 1/2 lb
    italian sausage, mild
  • 1 box
    barilla no cook lasagna noodles
  • 2 bottle
    tomato basil spaghetti sauce (use a high quality sauce)
  • 1 sm
    sweet onion, chopped
  • 1 can
    2 oz of sliced black olives
  • 1 can
    fire roasted chopped tomatoes
  • 16 oz
    ricotta cheese
  • 1 lg
    egg
  • 1/2 c
    parmesan cheese, grated
  • 1/2 c
    mozzarella cheese, shredded
  • salt and pepper
  • 1 lb
    mozzarella, shredded
  • 1 lb
    extra sharp cheddar cheese, shredded

How To Make roger's lasagna

    Preheat oven to 350*. Grease lasagna pan or 9x13 pan.

    Brown sausage in a skillet. drain. set aside.
  • 3
    In a bowl mix together the ricotta cheese, egg, parmesan cheese, and the 1/2 cup mozzarella cheese.

    Start layering, starting with noodles, ricotta mixture,sausage, onion, olives, tomatoes, sauce, then a combination of the sharp cheddar and the mozzarella cheese. Repeat layers until ingredients are all used (usually 3 good layers). You want to save some cheese to put on top.

    Bake for about 45 minutes or so until bubbly and the noodles are cooked through.

    NOTE: I always grate my own cheese, it melts better and there is a taste difference.
